PARALUPI, l’appassimento Varvaglione

A new and special wine for Varvaglione: Paralupi is a red passito wine, made from grapes that partially raisin on the vine for about 20 days. It is a programmed risk that the attentive winemaker takes, entrusting the success of the project to the climate and weather conditions. In the vineyard, careful measures of protection are taken to assure that the grape can express itself with great elegance.

A short maceration prior to fermentation of the destemmed grapes at a temperature of 12-14°C extracts characteristic aromas; fermentation follows for 20-25 days at a controlled temperature of 24-26°C. Then the wine is separated from the skins to start malolactic fermentation. Then the wine ages for about six months in barriques.

Paralupi is a blend of Negroamaaro, Primitivo and Malvasia Nera. On the nose, you find aromas of ripe red fruit, bitter cherry jam and notes of vanilla and chocolate. On the palate, it is full-bodied, dominated by velvety tannins. This is a round wine, the fruit of an idea of winemaking that leads to great quality.
